Pumpkin Cranberry Walnut Oatmeal Cookies (aka What to do with your leftover pumpkin puree)

Around mid-August every year I start to get overly excited for Fall and more importantly for my favorite squash: the pumpkin.
“Pumpkin, Pumpkin, Pumpkins!”, This seems to have become my Fall mantra I find myself chanting each year around September when I can start to see the orange hues peeking out of the landscape of our local pumpkin farm.
I love pumpkins.
I love to cook, bake, and of course carve the hell out of them around Halloween. I guess it’s only natural that I find myself brainstorming all the different recipes I can sneak it into during the Fall and Winter months. Last weekend I was on a sweet bread kick and made this amazing Cranberry Nut Pumpkin bread recipe I found (which is an interesting story in and of itself, so I will save it for a later post), but the point is I had about a cup and a half of leftover pumpkin sitting in my fridge.
The other night I was in bed and suddenly craved an old fashioned oatmeal cookie like my Mom used to bake straight from the recipe under the lid of your favorite cardboard oats container. Inspiration took hold from there and I decided to experiment with that very same old run of the mill oatmeal cookie recipe. I added pumpkin puree, dried cranberries, chopped walnuts and of course your myriad of pumpkin spices. I was a little worried the pumpkin would add too much moisture, but that was actually what made these cookies the most incredibly moist, soft, chewy oatmeal cookies I have ever had. So, I can confidently say make these cookies and you will not regret it! If you are like me, you will make a double batch because I make my cookies big and burly. There were only six to a baking sheet which gives you somewhat of an idea on how large they were.
These are really the epitome of the perfect Fall comfort treat, especially when eaten still warm from the oven. Enjoy!
And now for my special pumpkified recipe…
Pumpkin Cranberry Walnut Oatmeal Cookies
Ingredients:
3/4 cup vegetable shortening
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1/4 cup water (if the batter seems already too moist from the pumpkin I would hold back on the water, but if it seems too dry then add accordingly, I wound up needing to add all the water)
1 cup pumpkin puree (not pumpkin pie puree, you want just the pure pumpkin)
1 tsp. vanilla
3 cups Quick Oats
1 cup whole wheat flour (sifted)
1 tsp. salt
1/2 tsp. baking soda
1 tsp. Cinnamon
1/2 tsp. Nutmeg
1/2 tsp. Allspice
1/4 tsp. Ginger
1/4 tsp. Cloves
1/4 tsp. Mace
1/2 cup chopped walnuts (or really any nut you prefer)
1/2 cup dried cranberries
Directions:
Preheat oven to 350°F. Beat together shortening, sugars, egg, water, vanilla, and pumpkin puree until creamy. Sift flour, salt, baking soda and spices onto wet ingredients. Then add oats, cranberries and nuts to mixture; mix until dried ingredients are fully incorporated.
I like to use Silpats on my baking sheets therefore negating the need to grease your cookie sheet and for ease of clean-up. However, if you do not have a Silpat then grease a cookie sheet and drop rounded spoonfuls spaced evenly onto the pan. Bake at 350°F for 12-15 minutes. Mine took 17 minutes since they were so large. I did the toothpick test to determine if they were done. I like to take mine out a minute or two early (since they will still cook for a few minutes out of the oven) which allows for a softer, chewier cookie. I also let them set for about 3-5 minutes on the actual pan before transferring them to a cooling rack.
Of course now that I am typing this up I just had a brilliant idea that would make these even better. Once you put the batter on the baking sheets you could sprinkle each cookie with some brown sugar and wheat germ. (This idea was spurred from that Pumpkin bread I mentioned earlier.)
